Freezing onions is a great way to save money and time. Simply line a tray with waxy paper and place a flat layer of onions on the tray. Once they are frozen, pour them into your zip lock bag to store them in the freezer. If you freeze them this way, the rings or pieces will stay separate. If you do not freeze diced onion this way, you will end up with a large clump of frozen onion.

Onion puree is easily made by blending onions in a blender or food processor. This puree can then be frozen in small bags for use in any number of dishes including pasta, curries and soups. Choose small snack-bags for pureed onion and pat them flat for easier storage in your freezer.
