How to Cook Lentils in Rice Cooker

Lentils are small legumes, available in a wonderful variety of distinctive colors, such as red, brown, black, and green, in small to medium sizes. Cooking lentils is so easy, the smaller, the more quickly it will cook, such as the earthy flavored small red lentils. Lentils are a popular choice with vegetarians, and especially in stews and vegetable dishes in Asia and the Mediterranean. The lentil is high in protein as well as packed with iron and fiber. Lentils of all kinds are very inexpensive to purchase, easy to prepare and adaptable with many kinds of meats.

If you decide to prepare lentils in rice cooker, it will take about 25 to 30 minutes to cook. Always pick through the lentils and discard stones or dirt. Rinse them thoroughly under cold running water. Allow them to soak at least 30 minutes, drain and add two cups of fresh water to one cup of lentils, place the lid on and turn the rice cooker to Steam/Cook. Do not add salt until the cooking time has finished, it will make them tough otherwise. The lentils should be tender in approximately 30-40 minutes, or when the rice cooker switches to Keep/Warm mode. Stir the lentils, let them sit ten minutes before serving. Add the salt, vegetables, meat or other seasonings before serving.

Lentils nutrition is great served hot or cold. When combined with wild rice and fresh herbs, lentils take on a new flavor. For a tasty lunch or light supper, rinse 1 cup of wild rice and ½ cup dried brown lentils. Combine with 4 and ½ cups of water. Cook together on Steam/Cook in a rice cooker about one and a half hours, until the wild rice is tender. Stir in ½ a red or green bell pepper, finely minced, 3 thinly sliced green onions and a thinly sliced rib of celery. Cook with the lid on for 10 minutes longer. Remove from the rice cooker and allow to rest at room temperature for a few minutes. Stir in 1/3 cup of your favorite Italian dressing with 2 tablespoons of each, marjoram, parsley, thyme and Dijon mustard. It is time to season with to taste before refrigerating, serve chilled.
