The purists of tiramisu will frown upon this version of their favorite dessert, as it’s made with a sponge, instead of savoiardi, but I can assure you it’s delicious. Here are the ingredients for 6-8 people.
For the sponge
7 eggs
150gr (5.3 oz) flour, sifted, plus extra for dusting
150gr (5.3 oz) sugar
1 tsp baking powder
2 cups of lukewarm coffee to wet the sponge
Bitter cocoa powder to decorate
For the cream:
255gr (9 oz) mascarpone cheese
2 egg yolks
100gr (3.5 )sugar
3 tbsp whipped cream
Separate the yolks from the whites, set two yolks aside and mix the remaining 5 with the sugar until you get a pale and smooth cream. Whip the whites in a separate bowl until firm and add them to the yolks and sugar mix, then add the flour and the baking powder.
